BBQ Chilli ginger lamb with carrot orange and avocado salad

There is no denying the weather has taken a turn for the best and Summer feels like it’s here! Don’t go for boring BBQ sausages and burgers. Try something a little more tasty, posh and full of goodness. It is a good idea to marinade your lamb the night before so plan ahead.



Ingredients (serves 4)

4 garlic cloves, crushed
1 tbsp grated ginger
1 tbsp lemon juice
1 tbsp olive oil
½ tsp chilli powder
1 tsp cumin
8 lamb chops

2 oranges, plus zest and juice of 1
3 carrots, halved lengthways and sliced with a peeler
70g bag rocket
2 avocados, stoned, peeled and sliced
1 tbsp olive oil

1. Put the garlic in a bowl with the ginger, lemon juice, oil, spices and seasoning. Blitz with a hand blender until smooth, then use to coat the lamb chops on both sides. Leave to marinate in the fridge for a couple of hours or overnight.

2. Heat a barbecue until hot. Barbecue the chops over the coals for 3 mins on each side until cooked but still pink and juicy in the centre.

3. Whilst the lamb is cooking, cut the segments from 2 of the oranges and put in a bowl with the carrots, rocket and avocados. Whisk together the orange juice, zest and oil. Toss through the salad, and season.
