Parsnip Soup (without the cream?)


Parsnip soup is a wonderful dish to warm the cockles and is so versatile you can sweeten it up, spice it up and make it deliciously creamy all the while keeping it healthy and providing lots of vitamins.

INGREDIENTS

  • 500g parsnips, chopped
  • Thumb size piece of ginger, chopped finely
  • 2cm piece of turmeric, chopped finely
  • 1 clove of garlic, crushed
  • 1 small chilli
  • 1/2 teaspoon of curry powder
  • Stock (chicken, pork or vegetable all work well)

METHOD

  1. Finely chop
